Seitan

I just made seitan and thought that I should jot down my very own recipe that I Frankensteined from various recipes after over five years of making seitan. I've tried boiling, steaming, and baking seitan and experimented with so many different combinations of flours and seasonings. This recipe is the one I use the most because it's done in like 30 minutes instead of over an hour like the steaming method takes... I need my protein *now*

I built the recipe below based on futurelettuce's "laziest, quickest seitan recipe" on Instagram. You can see their original recipe here.

Some notes on the ingredients:

DRY: The most important components are the vital wheat gluten, flour, and warm water. You can omit/swap out the herbs and spices to whatever you want. This is just my favorite combination. Experiment!!

WET: I think black vinegar (found at Asian markets) is the most important, because the acid and flavor cuts that wheat-y, gluten flavor. If you live in the middle of nowhere like I do, without a single Asian market within several hours hours in any direction, other vinegars may work, like maybe apple cider vinegar? but you might need to add more molasses... idk I haven't tried any subs yet. Again, experiment.

Heather's Seitan Nuggets

INGREDIENTS

DRY

  • 100g vital wheat gluten
  • 30g all-purpose flour
  • 1 T nutritional yeast
  • 1/2 T mushroom powder
  • 1 T onion powder
  • 1/2 T garlic powder
  • 1 tsp cayenne pepper powder
  • 1 tsp smoked paprika
  • 1/2 T rosemary

WET

  • 1/2 C warm water
  • 1/2 T soy sauce
  • 1 T black vinegar
  • 1 T molasses

DIRECTIONS

  1. Mix the dry in a medium bowl. Mix the wet in a small bowl. Then pour the wet into the dry.
  2. Knead for like 5-10 minutes. Let rest for a while, like clean up and then come back to it.
  3. Rip into little bite-sized pieces.
  4. Add some oil or butter or whatever into a skillet, medium-low heat. Arrange the bites on a single layer and pan fry until crispy.
  5. Using little tongs or wooden chopsticks, flip each piece, then COVER and cook on low/medium-low for about 15 minutes, stirring every 5 minutes or so. Be careful not to let it burn.
  6. Then you can throw in a sauce (like in futurelettuce's video) or dip unsauced nuggets (the ultimate lazy way) in A1 steak sauce or wing sauce, etc.
